Harvested and produced in the village of Xian Pu situated at the southwest side of Fu Ding city in Fu Jian province, China. The area features high forest coverage and biodiversity. Tea plantations are loosly managed amoung natural forest and features. A sub-tropical monsoon climate leads to mild winters and summers with sufficient light and rainfall. Tea plantations are scattered across mountains that are ranging from 600-750m in altitude. 


This white peony is harvested and produced in 2019 spring and 2024 spring using only young buds and leaves. The fresh leaves are withered in the sun and in controlled environment, followed by steps of drying which can be done in several ways such as outdoor/indoor drying, charcoal roasting, based on the weather conditions and the anticipated character of the productThe dry leaves present a silver green colour profile, with intact sprouts and leaves where downy hairs are present. The aroma is slightly grassy with hint of floralness. The infusion presents light to golden yellow tunes, with a light and fresh body, delicate sweet and floral mouthfeel, and sensation that resembles mountain breeze and bamboo forests. 

 

For aging and storage, seal the tea packaging with a proper clip and store within a container that will conceal it from light, moisture and odors. Store in somewhere cool and dry, avoid any cross contamination with other smells. It is recommeded to consume this tea both fresh and aged.

  • Brewing Recommendation

    Water Temperature: 85-90 °C 

    Kung Fu Style:

    • Amount of Tea: 3-5 g
    • Tea-Water Ratio: 1:25 
    • Infusion Time: 30 s for the first infusion, increase by 5-10 s for the subsequent brews. Repeat for 6-10 times until flavour fades out. 

    Regular Brewing:

    • Amount of tea: 2-5 g 
    • Tea-Water Ratio: 1:100
    • Infuse for 2-3 minutes, remove the tea leaves after infusion, repeat for 1-2 times.
